The Making of Pumpkin Spice

We know Pumpkin Spice is everywhere! This year some larger companies (think pumpkin lattes) decided August was an appropriate time to bring back this fall favorite. As much as we love Pumpkin Spice, there is a time and place. And that time and place is right here, right now. October in Vermont!

Developing and launching a new flavor is a lot of fun! I get to fire up my trusty yellow KitchenAid and bake for hours. It's a nice change of pace and my kitchen smells amazing!  

Pumpkin Spice is one of my favorite flavors, and I look forward to it every fall.  So I definitely felt the pressure to get this classic just right... the perfect blend of spices and ratio of cream cheese to batter. 

Once I feel the recipe is absolutely perfect, I share it with our bakers.  They figure out how to scale the recipe while keeping the flavor exactly the same (or better) as when it was baked in my home kitchen. Our bakers are amazing and I can always count on them to nail it. This time was no exception. One bite and my jaw dropped.  All I kept saying was "these are phenomenal!"
